Yesterday Preston did his first every Triathlon in American Fork! His work was having a little competition and so he wanted join in. He trained really hard for this - 6 AM Swim Classes, 5:40 AM Spin Classes, and lots of running! He has lost a lot of weight and is looking fine! I am so proud of him and all his hard work. He did such a great job and finished in 1 hour and 13 minutes, pretty darn good!

American Idol
I love American Idol - I would say it is my favorite show of all time, well except Friends. This year though I am a little discouraged by the Top 13. I do really like this Kris Allen. If he gets kicked off I don't think I can watch. Is anyone thinking they just tried to picked the most unusual people out there? The judges love Adam Lambert and he kinda gives me the creeps, I would for sure not be a fan. So tell me who are you loving this Season 8?

Hopscotching Fun
Like everyone else, we have loved this warm weather. We have been playing outside pretty much nonstop, we can't get enough. Katelyn and I started to play Hopscotch on Saturday and have played at least one hour each day. Do you remember playing as a kid? I don't know if kids even play anymore! It is so fun, Katelyn is pretty dang good. I had a hard time picking up the marker on one foot at first, , but I am getting a little more bendy. Tate in the meantime has been riding around on Katelyn's princess scooter, his big feet help him maneuver it very well! I hope you all are enjoying this Spring weather while it lasts!

World Champion Hot Dog Eater
The other day Katelyn went to her cute little friend Ansley's house to play. (thanks Becky) So I wanted to take Tate out for a little bit by himself, and to his favorite place...COSTCO! We had so much fun. Tate is so funny there, he dashes to each sample and will wait a while if the still need some cooking. He loves to help me put the stuff in the cart too. After shopping we went and had lunch and he wanted a hot dog, well the kid ate the ENTIRE DOG! A two year old put the whole thing away, minus two bites by me and he wasn't happy about sharing it. He was loving it, I thought it was so funny! Tate LOVES his food.

"when we're helping we're happy"
My little kids love to help me around the house with all the housework. Whenever I start cooking, Katelyn says "Mommy, can I help" and they both scoot their bar stools over to the cooking spot. They also are good helpers with sweeping the floors and dusting the baseboards. I wish they would have the same joyful attitude about picking up their toys.

are you sick of videos of my kids?
Here are some cute little videos of my kids. Tate loves his basketball hoop and practices in his room for hours. He is figuring out that if he stands in the same place to shoot, he has a better chance. He LOVES it!
And the other one is Miss Katelyn doing her cartwheel. She has been taking tumbling for a few months and this one trick has required lots of practice. She is so proud of her hard work!

Zuppa Toscana Soup - The Best Soup Ever!
I made this yummy soup last this week and it was delicious. It is a copy cat of Olive Garden's and very close I might add. I changed the original a little bit to my own liking so try it however you like. It really is so YUMMY! Let me know if you try it out!
1 lb. Italian sausage, ( I used spicy, because it adds a little extra flavor)
1/2 lb bacon (I didn't add this to save on calories)
1 quart water
2 14.5 cans of chicken broth
2 large russet potatoes, scrubbed and cleaned and cubed
2 garlic cloves, crushed
1 medium onion, chopped
(I added 1 cup of frozen carrots too)
2 C. Kale, chopped
1 C. heavy whipping cream (I used 1 cup of milk and mixed it with 1 tsp. flour to save on calories too)
I also added a little pepper and a tiny dash of cayenne pepper
In a skillet over medium-high heat, brown sausage, breaking into small pieces and you cook. Rinse and set aside. Brown Bacon too. Place water, broth, potatoes, garlic, and onion (and carrots) in soup pot. Simmer over medium heat until potatoes are tender. Add sausage and bacon. Simmer for 10 minutes. Add Kale and cream (or milk). Add pepper, salt and cayenne if you want. Heat through.
It made quite a bit so the second day I just put it in the crockpot on low and it was even better the second day!

Holy Cow!!!
All I can say is this is dang GOOD TV tonight! It is a commercial and I am going crazy. I think I am happy with things so far...to be continued. I only have 14 minutes left of the THREE hours! If you haven't watched then I am mad at you and if you have no idea what I am talking about then I don't know if we can be friends!
